There, the coffee undergoes a meticulous 36-hour fermentation, with specific yeast inoculation before being washed and carefully dried—an elevated process that brings clarity and sweetness to a broader community harvest.

Wilton’s approach not only lifts the cup quality, but also the price paid to producers—a win–win, and an exciting glimpse into the future of coffee.
